Here we are, back into a deep freeze.
Spring is less than a month away but in Toronto, you can hardly tell. Snow buried streets and -30 degrees celsius again; it’s like spring is no where sight.
Looking on the bright side, we just enjoyed a beautiful sunny weekend! It was still freezing though, the wind was unbearable; it would take your breath away when you stepped outside of your house. The sun was shining which made the weekend even brighter (moods & all!) and that amazing sun of ours also creates a perfect day to make a new recipe for KF!
I decided to go with a salad recipe for today’s link up on Tasty Tuesdays, as I’m seriously craving some summer salads right about now. Since my garden is currently planted below 8 feet of snow, I decided to opt for something a little more “winter” like; enter sweet potatoes!
This salad is great as a side to this or maybe this…but I actually enjoyed it as an entrée. It was huge! I’m sure you can tell by the picture that this salad serves 4!
- 2 medium Sweet Potatoes
- 2 Celery Stalks
- 1/2 English Cucumber
- 1/2 cup Greek Yogurt
- 2 tbsp Vinegar
- 1/2 Lemon, juiced
- Peel potatoes and slice into small chunks.
- Fill a medium saucepan with water and bring to boil.
- Toss in sweet potatoes and boil for 5 - 8 minutes; or until soft.
- Meanwhile; chop cucumber and celery into bite sized pieces.
- Mix yogurt, vinegar and lemon into a small bowl; set aside.
- Once sweet potatoes are ready, set into a bowl and allow time to cool (I put the potatoes in the fridge for 15 minutes)
- When potatoes are cooled, toss in a large bowl with cucumber and celery.
- Serve salad topped with vinaigrette (or use vinaigrette for dipping)
When I made this recipe, I may have boiled the potatoes a few minutes too long. They lost a little bit of the “hard” potato look I was going for. This salad should have a little crunch to it, so if you (are like me, oops!) and boil the potatoes too long, you’ll get a sloppy salad! lol! Just sayin’!
But still, it is goooood!
This is the perfect salad for winter, I am definitely going to make it again and the vinaigrette was delicious! The best part of it all though, was Mark really liked it too! It’s hard to get him to even try a salad, let alone eating one! lolz!
